Eat from the Garden: Caprese Skewers

If you follow my Instagram feed, you've seen my garden posts and how rapidly its producing cherry tomatoes and basil this year! In an effort to use them all, I've been experimenting with a variety of different concoctions and sharing them with my pregnant neighbor, Anne!! I decided to make Caprese Skewers, and they were an instant hint! There are an abundance of modified caprese salad recipes around, but after receiving requests from followers, today I'm sharing mine!! 

CAPRESE SKEWER RECIPE

Ingredients: 

  • cherry or grape tomatoes
  • fresh basil
  • mozzarella balls (marinated or plain) 
  • sea salt grinder
  • cracked black pepper
  • extra virgin olive oil 
  • balsamic vinegar 

I start by picking cherry and grape tomatoes from the garden and trimming a few stems of basil! This is the fun part! I love being able to cook straight from the garden! Not only are the flavors more intense and fresh, I love that I'm able to show Stella how food is grown and that it doesn't just appear on a store shelf! 

After washing the basil and tomatoes, the preparation for these skewers is minimal! I like to layer mine in this order: tomato, basil, mozzarella. It does not matter how you order yours, but I do like to separate the mozzarella and tomato for visual appearance! 

Once all of the skewers are filled, I season them with a little sea salt and cracked black pepper. The next step depends on the mozzarella you choose! I've tried these with both plain mozzarella balls and marinated mozzarella balls. I love the flavor from the marinated mozzarella! If using plain mozzarella, in this step you will drizzle extra virgin olive oil over the top of the skewers. If using the marinated mozzarella, simply spoon out the extra olive oil and herbs and drizzle over the top of the skewers. 

Next, make a balsamic drizzle. For this, simply heat 1/4 cup of balsamic vinegar in a pot over medium heat. It will begin to bubble. Let it simmer for about a minute, and then turn down the heat. It will thicken up a bit to the point where it coats the back of a spoon. Allow the mixture to cool down, and then drizzle over the top of the skewers! 

Now dive in and enjoy!!! They are Ah-mazingly declicious and so easy to make!!! I hope you enjoy!!
